Vegetarian Quinoa Bowls

Ingredients

  • 1 T extra-virgin olive oil
  • ½ red onion, small dice
  • 1 bell pepper, small dice
  • 1 c quinoa, rinsed, uncooked
  • 1 c salsa
  • ½ t sea salt
  • 1 t cumin
  • 1 c water
  • ½ c black beans, rinsed, drained

Directions

  1. Set to "sear" and add oil. When hot, add onions and peppers. Sauté for about 5 minutes.
  2. Add quinoa, salsa, seasonings, water, and beans.
  3. Close lid and lock. Set to "rice".
  4. When done, natural release.
  5. Open. Fluff quinoa with fork. Serve in bowls and enjoy.
