Ingredients
- 1 c split yellow lentils
- 3 c water
- 1 t turmeric
- 2 T ghee
- 1 t cumin seeds
- 1 onion, small dice
- 2 fresh red chilies, whole
- Sea salt
- Fresh cilantro leaves (for garnish)
- Fresh lime wedges (for garnish)
- Cooked basmati rice
Directions
- Rinse yellow lentils until water comes out clear. Drain. Add yellow lentils to cooker. Pour in water. Add turmeric and stir well.
- Close and lock lid, set pressure cooker to "multi grain" and press "start/stop".
When done, quick release and make sure all pressure is released before opening lid. Carefully open lid. Lentils should have a creamy consistency. Season to taste with sea salt. Pour lentils into a large bowl; set aside.
- Set pressure cooker to "sear", add ghee, and press "start/stop". Add cumin seeds. When fragrant, add onions and chilies. Cook until onions are translucent. Return lentils to cooker. If lentils are too thick, add 1c of water.
- Close and lock lid, and set to "multi grain", adjust time to 2 minutes, and press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid. Serve with cilantro, lime wedges, and cooked basmati rice.
