Ingredients

  • 2 T butter
  • 1 onion, small dice
  • 1 carrot, small dice
  • 4 cloves garlic, minced
  • 2 c vegetable stock
  • 1 c brown rice, uncooked
  • 3 zucchini, shredded
  • 1 c cheddar cheese, shredded (optional)
  • Sea salt
  • Black pepper

Directions

  1. Set pressure cooker to "sear" and add butter. Press start/stop. When melted, add onion, carrot, and garlic. Sauté until onion is translucent, about 5 minutes.
  2. Add vegetable stock and rice. Close and lock lid, set pressure cooker to "rice", and press "start/stop".
  3. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and stir in zucchini and cheese (optional). Check seasoning and add salt and pepper, if needed.
