Apple Cinnamon Crumb Cake

Ingredients

  • 1½ c all-purpose flour
  • ½ c brown sugar
  • ¼ c sugar, granulated
  • ½ t sea salt
  • 1 t cinnamon, ground
  • ¼ t nutmeg, ground
  • ½ c butter, unsalted, melted
  • ½ t vanilla extract
  • 4 T butter, unsalted
  • ½ c sugar, granulated
  • 1 large egg
  • 1 t vanilla extract
  • ½ c sour cream
  • 1 c all-purpose flour
  • ¼ t baking soda
  • ¼ t sea salt
  • ½ t baking powder
  • 1 large (or 2 small) tart apples, peeled and diced
  • ½ c powdered sugar
  • 1½ -2 T apple cider

Directions

  1. Preheat oven to 350°F. Grease 8-inch springform pan and line bottom with parchment paper, set aside.
  2. In a medium mixing bowl, whisk together dry ingredients. Add melted butter and vanilla and stir until mixture is evenly moist; set aside.
  3. In a large mixing bowl, cream together butter and sugar until light and fluffy. Add egg and beat well. Add vanilla and sour cream and beat again.
  4. In another mixing bowl, stir together flour, baking soda, salt, and baking powder. Add to butter mixture and stir until just combined.
  5. Pour half batter into bottom of springform pan and evenly spread apple chunks over batter.
  6. Sprinkle 1 c of the cinnamon streusel crumbs over apples. Spread the remaining batter over the crumbs and top with the rest of the cinnamon streusel.
  7. Bake 32-37 min. or until knife inserted in center comes out clean. Before opening latch and removing ring up off spring form pan, run a thin knife around the cake.
  8. To make the glaze, whisk together powdered sugar with apple cider. Drizzle over the cake.
