Butterscotch Bourbon Pudding

Ingredients

  • ½ stick butter
  • 1 t vanilla extract
  • ¾ C brown sugar
  • 2 C heavy cream
  • 1 T bourbon
  • Pinch of salt
  • 4 egg yolks
  • ⅓ C cornstarch

Directions

  1. In a saucepan, melt butter and add vanilla.
  2. Add brown sugar and stir.
  3. Add in cream, bourbon, and salt.
  4. In a separate bowl, mix egg yolks and cornstarch.
  5. Combine cream mixture and egg yolk mixture in blender jar.
  6. Using the plunger lid, set blender to "Fresh" and blend for 30 seconds.
  7. Once finished, remove the lid and pour contents into a container.
  8. Let chill for 4 hours in the fridge.
  9. Serve and enjoy.
