Chicken Tikka Masala

Ingredients

  • ½ c raw cashews
  • 2 c tomato puree
  • 3 lbs chicken thighs, boneless, skinless, 1-inch cubes
  • 1 onion, thin sliced
  • 4 cloves garlic, minced
  • 3 T garam masala
  • 2 t sea salt
  • 1 t ground ginger
  • 1 t paprika
  • ½ t cayenne pepper
  • ½ c water
  • ½ c fresh cilantro, chopped

Directions

  1. Put raw cashews in a bowl and cover with water. Cover with plastic wrap; set aside.
  2. Add tomato puree, chicken, onion, garlic, garam masala, sea salt, ginger, paprika, cayenne pepper, and ½c of water. Mix well. Set to "poultry" and adjust for 10 minutes.
  3. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid.
  4. Drain cashews, pour in a blender and add ¼c of water. Blend until its smooth and creamy. Add mixture to the pot. Mix well. Serve and top with cilantro.
