Ingredients

½ c raw cashews
- 2 c tomato puree
- 3 lbs chicken thighs, boneless, skinless, 1-inch cubes
- 1 onion, thin sliced
- 4 cloves garlic, minced
- 3 T garam masala
- 2 t sea salt
- 1 t ground ginger
- 1 t paprika

½ t cayenne pepper

½ c water

½ c fresh cilantro, chopped
Directions
Put raw cashews in a bowl and cover with water. Cover with plastic wrap; set aside.
Add tomato puree, chicken, onion, garlic, garam masala, sea salt, ginger, paprika, cayenne pepper, and ½c of water. Mix well. Set to "poultry" and adjust for 10 minutes.
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid.
Drain cashews, pour in a blender and add ¼c of water. Blend until its smooth and creamy. Add mixture to the pot. Mix well. Serve and top with cilantro.
