Chipotle Chicken Stew

Ingredients

  • 2 lbs chicken breast, diced
  • 2 t cumin
  • 1 yellow onion, diced
  • Pinch of salt and pepper
  • 2 green chilies, diced
  • 1 can adobo chilies, diced
  • 1 c corn
  • 1 avocado, pitted, diced
  • 5 sprigs cilantro, chopped
  • ½ c water

Directions

  1. Place chicken into the cooker and season with cumin, salt, and pepper.
  2. Add onions, chilies, corn, and water.
  3. Cover pressure cooker with glass lid only. Do not close cooker' lid. Set to "slow cook" and adjust time to 5 hrs.
  4. Remove lid and give the stew a quick stir.
  5. Add in avocado and chopped cilantro. Garnish with sour cream, tortilla strips, or other favorites. Serve and enjoy.
