Preheat the oven to 350°F. Using an electric mixer, beat the butter with sugars until creamy. Add vanilla extract and egg. Beat on low speed until just incorporated.
Add flour, baking soda, and salt and mix until crumbles form. Using hands, press the crumbles together until a dough forms. Add the chocolate chips and incorporate.
Roll dough into 12 large balls. Place in the enamel baking pan or Silicone Baking Pan. Bake for 7-10 minutes. When done, the cookies will look puffy, dry, and tops will be just barely golden.
Remove and allow to cool in pan for 30 minutes before removing and serving.
