1½ c commercial graham cracker crumbs
- 5 T butter
- 1 t honey
- ¼ c sugar, granulated
- 5 (8-oz) bars cream cheese, room temperature
- 2 T all-purpose flour
- 1 T powdered sugar
- 1½ c sugar, granulated
- ¾ t vanilla extract

2 egg yolks, room temperature
- 5 eggs, room temperature

For Graham Cracker Crust
Mix graham cracker crumbs, butter, honey, and sugar with hands until well blended and crumbs appear moist.
- Heavily coat a 10-inch springform pan with cooking spray.
Pour crust into pan. With hands, spread evenly across the bottom and pat down firmly.
For Cake
Preheat oven to 250°F. Place cream cheese, 2T all-purpose flour, 1T powdered sugar, and 1½ c granulated sugar in a large mixing bowl. Beat on high until completely blended.
- Add vanilla and 2 yolks. Beat again. Add eggs one at a time, beating well.
- Pour into greased 10-inch springform pan. Bake for 1 hour, 45 min.
When done, let cool in oven. Do not open oven door (if using Oven Pro Plus or other, do not lift up Dome). This will prevent top of cake from cracking.
- Cool to room temperature. Refrigerate for 3 hours.
