¼ c coffee espresso

½ c brown sugar
- 1 T ground cumin
- 1 T ground paprika
- 1 T chili powder
- 1 T sea salt
- 1 T black pepper, fresh ground
- 2 rack ribs, cleaned

¼ c coffee rub
- 6 cloves garlic, whole
- 1 onion, medium, quartered
- 2 bay leaves
- 1 (12-oz) can root beer
- 1 (12-oz) cola

Directions
- In a bowl, mix together coffee, brown sugar, cumin, paprika, chili powder, sea salt, and fresh ground black pepper. Rub dry rub into ribs. Rub in well and cover all surfaces of ribs. Marinate 4-6 hrs.
- Add ribs, garlic, onion, bay leaves, root beer, and cola to pressure cooker.
- Close and lock lid. Set pressure cooker to "meat/stew", adjust time to 15 minutes, and press "start/stop".
- When pressure cooker is done, quick release and make sure all pressure is released before opening lid. Carefully open lid and remove ribs. Place on baking sheet and place under broiler to crisp outside. Serve hot.
