Ingredients

  • ½ c soy sauce
  • ¼ c vinegar
  • 1 T fish sauce
  • 1 T sugar
  • 1 T extra-virgin olive oil
  • 6 chicken drumsticks
  • 8 cloves garlic, crushed
  • 1 onion, small dice
  • 1 t ground black peppercorn
  • 1 dried chili
  • 2 bay leaves
  • Sea salt
  • Black pepper
  • Scallions, chopped (for garnish)

Directions

  1. In a mixing bowl, combine soy sauce, vinegar, fish sauce, and sugar.
  2. Set pressure cooker to "sear", add oil, adjust time to 10 minutes, and press "start/stop". When hot, add chicken and brown, 2 minutes per side. Remove chicken; set aside. Add garlic and onions. Sauté until onions are golden brown, about 6-7 minutes. Add ground black pepper, dried chili, and bay leaves. Add soy sauce mixture.
  3. Return chicken to pressure cooker. Close and lock lid, set pressure cooker to "poultry", adjust time to 8 minutes, and press "start/stop".
  4. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid, remove chicken and check seasoning of sauce. Add salt and pepper, if needed. Spoon sauce over chicken, garnish with scallions, and serve.
