Ingredients
- 1 (16-oz) bag dry cannellini beans
- 1 zucchini, cut into half moons
- 1 onion, small dice
- 1lb ground turkey
- 8c chicken broth
- 28oz diced tomatoes
- 1 clove garlic, minced
- 1c white wine
- 1lb ditalini pasta
- Romano cheese, for garnish
Directions
- Clean, rinse, and dry the beans.
- Place beans in pressure cooker with 2c chicken broth, onions, and garlic.
- Close lid and lock. Set to "beans" and adjust for 15 minutes.
- When done, quick release until all pressure is released.
Open and remove beans; set aside.
- Set cooker to "sear" and add ground turkey. Cook, stirring to crumble until fully done, approximately 5 minutes.
- Add rest of chicken broth, tomatoes, and white wine. Pour in beans.
- Close lid and lock. Set for 30 minutes.
- When done, quick release until all pressure is released.
- Open and add pasta and zucchini.
- Close lid and lock. Set to "potatoes" and adjust for 4 minutes.
- When done, quick release until all pressure is released.
- Open and garnish with Romano cheese and serve.
