Ingredients
- 1 egg
- 2 T water
- 2 C walnuts
- 2 C cashews
- ½ C pumpkin seeds
- ½ C sunflower seeds
- ½ C shredded coconut
- ½ C dry cranberries
- ¼ C maple syrup
- 3 t vanilla extract
- Pinch of cinnamon
- Pinch of salt
Directions
- In a bowl, whisk together egg and water.
- Add all of ingredients into blender jar except cranberries.
- Using the plunger lid, pulse granola mixture for 8 seconds.
- Once finished, open the lid and pour mixture onto a sheet pan lined with parchment paper.
- Add cranberries to mixture.
- Place in an oven and bake at 300°F for 25 minutes.
- Remove from oven and allow to cool and harden for 20-25 minutes.
- Break granola into clusters, serve, and enjoy.
