Ingredients

  • 2 T extra-virgin olive oil
  • ½ yellow onion, small dice
  • 1 red bell pepper, small dice
  • 2 jalapeño peppers, small dice
  • 1 lb ground turkey
  • 1 T fresh ginger, minced
  • 2 cloves garlic, minced
  • ½ t curry powder
  • 2 t cumin, ground
  • 2 T garam masala
  • 1 t smoked hot paprika
  • 1 (15-oz) can tomatoes, crushed
  • ¾ c water
  • 1 t honey
  • Sea salt
  • Cracked black pepper
  • 6 hamburger buns

Directions

  1. Set to "sear" and add oil. When hot, add onions, red pepper, and jalapeños. Sauté until onions are soft.
  2. Add ground turkey. Cook until meat is ¾ of the way cooked through. Add ginger, garlic, curry powder, cumin, garam masala, and paprika. Sauté about 1 minute or until spices are fragrant.
  3. Add tomatoes and pour in water. Simmer 15-20 minutes to allow sauce to thicken and all the flavors to meld together. Add more water as needed.
  4. Right before serving, add honey and stir to incorporate. Add salt and pepper to taste.
  5. Spoon meat and some sauce onto toasted hamburger buns. Serve.
