Lemon Pepper Salmon

Ingredients

  • ¾ c water
  • 2 (8-oz) salmon fillets
  • pinch of salt and pepper
  • ½ lemon, sliced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 sprig rosemary

Directions

  1. In the pot, add water and rosemary and place in steamer rack. Add salmon, skin-side down. Season salmon with salt, pepper, and cover with sliced lemon.
  2. Close and lock the lid, set cooker to "fish", and cook for 3 minutes. Press start/stop.
  3. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and remove salmon.
  4. Remove the steamer rack and set cooker to "sear". Add sliced vegetables. Sear veggies for 3-4 minutes. Remove veggies and serve with salmon.
