Ingredients
- 2 T extra-virgin olive oil

½ c onions, minced
- 1 carrot, peeled and diced
- 1 c mushrooms, sliced
- 2 cloves garlic, minced
- 1 c lentils, rinsed
- 1 (14.5-oz) can tomato, crushed
- 2 T tomato paste

¾ c water
- Pinch of salt and pepper
- Pinch of chili flakes
- 2 T oregano
Directions
- Set pressure cooker to "sear" and add olive oil, onions, and carrots. Season with salt and pepper. Once vegetables begin to sweat, add mushrooms, garlic, lentils, tomato paste, tomatoes, water, and spices.
- Close and lock the lid, set to "rice" and adjust for 20 minutes.
- When done, allow cooker to naturally release, then quick release and make sure all pressure is released before opening lid. Carefully open lid and stir sauce. Season, if necessary. Serve over pasta.
