Porcupine Meatballs

Ingredients

  • 1 pound ground pork
  • ½ cup instant rice
  • ¼ cup onion, diced
  • 1 tablespoon vegetable oil
  • 1 cup of beef stock, divided
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 (16-ounce) jar spaghetti sauce
  • 3 teaspoons sugar

Directions

  1. Add ground pork, rice, onion, oil, ⅓ cup beef stock, Worcestershire sauce, garlic powder, salt and pepper to mixing bowl and mix to combine.
  2. For pork mixture into 1½-inch balls, set aside.
  3. Add spaghetti sauce, sugar and remaining beef stock to NuWave Pressure Cooker.
  4. Add meatballs to Pressure Cooker, cover and lock in push plate.
  5. Turn pressure regulator to 1 for low pressure.
  6. Set NuWave PIC to 250°F and cook for 12-14 minutes.
  7. Let Pressure Cooker sit for 10 minutes to let pressure naturally release before unlocking push plate and removing lid.
