Ingredients
- 2 green zucchinis, sliced ½-inch thick
- 2 yellow zucchinis, sliced ½-inch thick
- 2 carrots, blanched and sliced ½-inch thick
- 1 red pepper, sliced ¼-inch thick
- 2 Chinese eggplant, sliced ¼-inch thick
- Salt and pepper to taste
Directions
- Prepare and slice all vegetables and season with salt and pepper.
- Combine all vegetables and place is NuWave Baking Pan.
- Place Pan in NuWave Brio Basket and cook at 360°F for 25 minutes.
