Ingredients
- 1 butternut squash, cut in half lengthwise and seeds removed
- 2t sugar
- 2t salt
- Extra-virgin olive oil, as needed
Directions
- Prepare squash; set aside.
- Brush with olive oil.
- Add sugar and salt between both halves.
- Bake butternut squash on 1-inch rack at 350°F for 35 minutes.
- Medium dice cooked squash.
- Transfer to serving platter.
- Drizzle with olive oil for garnish.
