Stuffed Baked Potatoes with Bacon

Ingredients
- 6 medium baking potatoes, washed and dried
- 1c milk, slightly heated
- 1c sharp Cheddar cheese, grated
- 3T butter or margarine
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 2T green onions, chopped
- 6 slices bacon, fried and crumbled
Directions
- Punch holes in potatoes with fork.
- Bake potatoes on 1-inch rack at 350˚F for 1 hour.
- Remove potatoes from oven and cool for about 15 minutes, until you can handle them comfortably.
- Slice off top of each potato and scoop out inside.
- Mash well. Add butter, cheese, salt, pepper and milk; mix thoroughly.
- Spoon potato mixture back into potato skins.
- Bake on 1-inch rack at 350°F for 7 minutes.
- Garnish with bacon and green onions.
