Sweet Potato Casserole with Streusel Topping

Ingredients
- 4 sweet potatoes
- ⅓c and 3 tablespoons butter, divided
- ½c sugar
- ½c brown sugar
- 2 eggs, slightly beaten
- ½t salt
- 1t vanilla
- ½c flour, divided into ¼c and ¼c
- ¼c pecans, chopped
Directions
- Place sweet potatoes on 3-inch rack and cook at 350°F for 40 minutes.
- Let sweet potatoes cool for about 15 minutes.
- Peel sweet potatoes.
- Place them in medium bowl and mash.
- Add ⅓c butter, sugar, eggs, salt, vanilla and ¼c flour; mix well.
- Place mixture in 1½-quart casserole dish.
- Place dish on 1-inch rack and bake at 350°F for 20-22 minutes.
- Combine ¼c flour, 3 tablespoons butter, brown sugar and pecans; mix well.
- Remove Dome and stir casserole.
- Spread streusel topping on casserole.
- Continue to bake for additional 12 minutes.
