Roasted Root Vegetables

Ingredients
- 1 bunch organic colored carrots, peeled
- 1⁄2 red onion, quartered
- 6 cloves garlic
- 1 yam, peeled, quartered
- Sea salt, as needed
- Freshly ground black pepper, as needed
- 3 T extra-virgin olive oil
Directions
- Set Bravo to “Roast” and preheat to 425 ̊F.
- Toss vegetables in a bowl with olive oil and season with salt and pepper.
- Place vegetables on Baking Pan. Place on Cooking Rack in slot 1 in Bravo.
- Set Bravo to 425 ̊F for 35 minutes.
- Carefully turn vegetables halfway through cooking.
- When done, carefully remove vegetables and serve.
