Ingredients

  • 3 cloves garlic, minced
  • 3 T ginger, minced
  • 2 c tomato sauce
  • 1 T garam masala
  • 1 T cumin
  • Pinch of salt and pepper
  • 14 oz coconut milk
  • 2 c spinach
  • 8 oz paneer cheese

Directions

  1. Add all ingredients to pressure cooker except for the spinach and cheese.
  2. Cover with glass lid and set to "slow cook" for 2 ½ hrs.
  3. In the last half hr, remove lid and stir in spinach.
  4. Replace lid and finish cooking.
  5. Remove lid, add cheese, and blend contents. Serve with a bowl of quinoa.
