Ingredients
- 1 lb ground beef
- 1 egg

⅓ c bread crumbs
- 1 T ketchup
- 2 T Worcestershire sauce, divided
- 2 cloves garlic, minced
- Sea salt
- Black pepper, ground
- 2 T extra-virgin olive oil
- 2 T unsalted butter
- 1 onion, medium chop
- 1 T thyme, fresh, chopped

½ c mushrooms, thinly sliced
- 2 T all-purpose flour
- 1 T tomato paste
- 1 c beef stock
Directions
- In a large bowl, mix together ground beef, egg, bread crumbs, ketchup, 1T Worcestershire sauce, and garlic. Season with sea salt and ground black pepper. Divide into 4 equal amounts and make oval patties.
Set pressure cooker to "sear", adjust time to 10 minutes and add oil and butter. Place meat patties in and sear both sides; remove and set aside on a platter.
- To the remaining fat, add onions, thyme, and mushrooms. Cook until golden brown. Sprinkle flour over onions and mushrooms. Mix well. Add tomato paste and mix again until mixture turns brown. Add remaining Worcestershire sauce and beef stock.
- Return patties to cooker. Close and lock lid. Set pressure cooker to "meat/stew" and adjust time to 10 minutes. Press start/stop.
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and season to taste with sea salt and black pepper, if necessary.
