Silver Dollar Pancakes

Ingredients
- 1½ cups flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1¼ cups milk
- 3 tablespoons canola oil or melted butter
- 2 eggs
- ¾ teaspoon salt
- 2 tablespoons extra virgin olive oil
Directions
- In a small bowl, whisk together flour, sugar, baking powder, and salt, set aside.
- In a medium bowl, whisk together milk, oil or butter, and egg.
- Add wet ingredients to dry ingredients
- do not overmix.
- Set Skillet to 250ºF and 1-2 tablespoons oil.
- Pour 3 tablespoons batter at a time into Skillet and cook until you see bubbles form on the pancakes. Flip, then continue to cook until golden brown.
- Repeat steps 4 and 5 with remaining batter.
