- 2¾ c all-purpose flour
- 2 t baking powder
- ½ t sea salt
- 1 t cinnamon, ground
- 1 c unsalted butter, room temperature
- 1¼ c sugar, granulated
- ¼ c dark brown sugar
- 2 large eggs, room temperature
- ½ t pure vanilla extract
3 T sugar, granulated
2½ t cinnamon, ground (mixed)
Preheat oven to 350°F. Line the enamel baking pan with parchment paper. Or, use Silicone Baking Pan.
In a bowl, mix together flour, baking powder, salt, and 1t cinnamon; set mixture aside.
In a mixer fitted with a paddle attachment, cream together butter, granulated sugar, and brown sugar. Add vanilla extract and eggs one at a time, mixing after each. Scrape down sides of the bowl as necessary.
With mixer on low, gradually add dry ingredients and mix until incorporated. Do not overmix.
Remove dough. Roll dough into balls and then roll each in cinnamon sugar. Place on prepared baking pan or in Silicone Baking Pan. Bake for 8-10 minutes.
- Allow cookies to cool on a wire rack before serving.
