Ingredients
- 2¾ c all-purpose flour
- 2 t baking powder
- ½ t sea salt
- 1 t cinnamon, ground
- 1 c unsalted butter, room temperature
- 1¼ c sugar, granulated
- ¼ c dark brown sugar
- 2 large eggs, room temperature
- ½ t pure vanilla extract
- 3 T sugar, granulated
- 2½ t cinnamon, ground (mixed)
Directions
- Preheat oven to 350°F. Line the enamel baking pan with parchment paper. Or, use Silicone Baking Pan.
- In a bowl, mix together flour, baking powder, salt, and 1t cinnamon; set mixture aside.
- In a mixer fitted with a paddle attachment, cream together butter, granulated sugar, and brown sugar. Add vanilla extract and eggs one at a time, mixing after each. Scrape down sides of the bowl as necessary.
- With mixer on low, gradually add dry ingredients and mix until incorporated. Do not overmix.
- Remove dough. Roll dough into balls and then roll each in cinnamon sugar. Place on prepared baking pan or in Silicone Baking Pan. Bake for 8-10 minutes.
- Allow cookies to cool on a wire rack before serving.
