Sous Vide Spatchcock Chicken

Ingredients
- 1 whole chicken, 4lbs. to 5lbs., spatchcocked
- 2T sea salt
- 1t freshly ground black pepper
- 1/2t garlic powder
- 1/2t onion powder
- 1/4t 5-spice powder
- 1/2t sugar
Directions
- Season the chicken with all ingredients on both sides. Place on baking pan and refrigerate overnight.
- Press PRESET and use the START/PAUSE dial to select PRESET 2. Press START/PAUSE to begin preheating. Once preheated, the unit will beep twice, display “Ready”, countdown for 10 seconds and then beep once.
- Open the door and place the chicken and baking pan on rack position 2, breast-side up.
- Close the door to begin Stage1 (155°F sous vide, 90% steam) for 4 hours.
- When finished cooking, the unit will beep three times “Remove” will appear. Open the door and remove to remove chicken and pan, tent to keep warm.
- Close the door to preheat for Stage 2 (425°F for 20 minutes).
- Once preheated the unit will beep 2 times, “ADD” will appear then place the pan with the chicken to rack position 2 and close the door to begin the cooking.
- Open the door and place chicken on rack position 2, cooking until golden brown.
- When finished cooking, the unit will beep three times and display “End”.
- Remove chicken, place on a plate, carve and enjoy.
