Stout Beer BBQ Ribs

Ingredients
- 2 racks baby back ribs, 1-½ to 2 lbs each
- 1 T vegetable, olive, or bacon oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 T smoked paprika
- 2 T brown sugar
- 1-½ T chili powder
- 1 t kosher salt
- ½ t freshly ground black pepper
- 1-½ c ketchup
- 3 T brown sugar
- 3 T Worcestershire sauce
- 3 T apple cider vinegar
- 1 t dry mustard powder
- ¾ t kosher salt
- 1 c stout beer
Directions
- Cut meat into two-rib sections and lay out on a large baking sheet lined with foil. Combine all dry rub ingredients. Sprinkle over ribs and rub into both sides of meat; set ribs aside.
- In a mixing bowl, whisk ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, stout beer, mustard powder, and salt. Set to "sear" and add onions and oil. Sauté onions for 3-4 minutes. Add garlic and sauté for an additional 30 seconds, stirring often. Add BBQ sauce from bowl into the cooker and stir. Add a few ribs at a time, using tongs to gently coat them in sauce. Arrange ribs standing upright with meat-side facing outward.
- Cover with glass lid. Set for 3 hrs. When done remove ribs, place on a platter, and coat with sauce.
