Ingredients

  • 1 c quinoa
  • 2 c water
  • Pinch of salt and pepper
  • 2 scallions, sliced thin
  • ½ lemon, juiced
  • 1 T extra-virgin olive oil

Directions

  1. Add quinoa, water, salt, and pepper to the pressure cooker.
  2. Close and lock lid, set to multi grain, and adjust for 2 minutes.
  3. When done, quick release and make sure all pressure is released before opening lid. Stir the quinoa, add lemon, scallions, and olive oil. Let cool and serve as a side or main dish.
