Ingredients
- 10-inch pie crust

1-½ c water
- 12 eggs

½ c milk

½ t sea salt

¼ t black pepper
- 3 c baby spinach, chopped
- 1 c tomatoes, small dice
- 3 scallions, thin sliced
- 4 tomatoes, sliced

¼ c cheddar cheese, shredded
Directions
- Place steamer rack in bottom of cooker. Pour in water.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- In a baking dish that will fit in cooker, add spinach, onions, and diced tomatoes. Pour egg mixture over the vegetables in baking dish. Place sliced tomatoes on top. Sprinkle cheese on top. Place baking dish on top of rack.
- Close lid and lock. Set to "bake" and adjust for 20 minutes.
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and remove quiche and serve.
