In a medium bowl, whisk together butter, melted chocolate, eggs, and vanilla. Gradually add wet ingredients to dry ingredients and mix together, being careful not to overmix. Set Skillet to 250°F and add 1-2 tablespoons oil. Pour 3 tablespoons batter at a time into Skillet and cook for 2-3 minutes, until they are spring form to the touch. Once cooked, place pies on a cooling rack and let cool flat side up. Repeat steps 5-6 with remaining batter. While pies cool, prepare filling by adding sugar and butter to stand mixer and mix on low speed for 3 minutes, or until wet and blended. Increase speed to medium and continue mixing for additional 3 minutes. Add vanilla and cream and continue to beat on medium speed for 1 minute. Add more cream if necessary for the perfect spreading consistency. Once pies are cool, spread filling onto flat side of half of the pies. Top with remaining pies by pressing lightly to make each pie.
