Ingredients
- 1 cup all-purpose flour
- 1 cup sugar
- ¼ cup natural cocoa powder
- ½ teaspoon baking powder
- ¾ teaspoon fine salt
- ½ cup (1 stick) unsalted butter
- 1 cup semisweet chocolate chips, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons canola oil
- 3 cups confectioners’ sugar
- 1 cup butter
- 1 teaspoon vanilla extract
- 1-2 tablespoons whipping cream

- In a small bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt set aside.
- In a medium bowl, whisk together butter, melted chocolate, eggs, and vanilla.
- Gradually add wet ingredients to dry ingredients and mix together, being careful not to overmix.
- Set Skillet to 250°F and add 1-2 tablespoons oil.
- Pour 3 tablespoons batter at a time into Skillet and cook for 2-3 minutes, until they are spring form to the touch.
- Once cooked, place pies on a cooling rack and let cool flat side up.
- Repeat steps 5-6 with remaining batter.
- While pies cool, prepare filling by adding sugar and butter to stand mixer and mix on low speed for 3 minutes, or until wet and blended.
- Increase speed to medium and continue mixing for additional 3 minutes.
- Add vanilla and cream and continue to beat on medium speed for 1 minute. Add more cream if necessary for the perfect spreading consistency.
- Once pies are cool, spread filling onto flat side of half of the pies.
- Top with remaining pies by pressing lightly to make each pie.
