Ingredients

  • 3 lbs beef chuck, cut into 1-inch cubes
  • 1 T coconut oil
  • 5 carrots, peeled, cut into 1-inch pieces
  • 6 celery stalks, cleaned, cut into 1-inch pieces
  • 1 c onion, large, diced
  • 1 c white mushrooms
  • 1 c fresh tomato, blended, strained
  • 1 t ground cinnamon
  • 1 t cumin
  • 1 t garlic powder
  • 1 t paprika
  • 1 bay leaf
  • Sea salt
  • Freshly ground black pepper

Directions

  1. Season meat with sea salt and freshly ground black pepper; set aside.
  2. Set pressure cooker to "sear" and add oil. When hot, add carrots, celery, onions, and white mushrooms. Sauté for 5 minutes. Add beef and cook until brown. Add tomatoes, cinnamon, cumin, garlic powder, paprika, and bay leaf. Mix well.
  3. Close and lock lid. Set pressure cooker to "meat/stew" and adjust for 25 minutes.
  4. When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and check seasoning. Add salt and pepper, if needed. Serve beef hot.
