Ingredients
- 3 lbs beef chuck, cut into 1-inch cubes
- 1 T coconut oil
- 5 carrots, peeled, cut into 1-inch pieces
- 6 celery stalks, cleaned, cut into 1-inch pieces
- 1 c onion, large, diced
- 1 c white mushrooms
- 1 c fresh tomato, blended, strained
- 1 t ground cinnamon
- 1 t cumin
- 1 t garlic powder
- 1 t paprika
- 1 bay leaf
- Sea salt
- Freshly ground black pepper
Directions
Season meat with sea salt and freshly ground black pepper; set aside.
Set pressure cooker to "sear" and add oil. When hot, add carrots, celery, onions, and white mushrooms. Sauté for 5 minutes. Add beef and cook until brown. Add tomatoes, cinnamon, cumin, garlic powder, paprika, and bay leaf. Mix well.
- Close and lock lid. Set pressure cooker to "meat/stew" and adjust for 25 minutes.
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and check seasoning. Add salt and pepper, if needed. Serve beef hot.
