Ingredients
- 1 T extra-virgin olive oil
- 1 yellow onion, small dice
- 4 cloves garlic, minced
- 1 c soy sauce
- 2 T fish sauce
- 7 T brown sugar
- 1 c ketchup
- 2 lemons, juiced
- 2 lbs beef short ribs
Directions
Set pressure cooker to "sear" and add oil. When oil is hot, add onion and garlic. Sauté until onions are just turning brown, then add soy sauce, fish sauce, brown sugar, ketchup, and lemon juice. Add ribs and close and lock lid. Set pressure cooker to "meat/stew" and adjust time to 30 minutes.
- When done, allow pressure cooker to naturally release pressure for 15 minutes, then do a quick release and make sure all pressure is released before opening lid. Carefully open lid and remove ribs. Place on a baking sheet and place under oven broiler for 10 minutes or until ribs reach desired crispiness.
- While ribs are in broiler, set pressure cooker to "sear" and simmer sauce until to desired consistency is reached. Serve with sauce drizzled over ribs or served on the side.
