Gnocchi Soup

Ingredients

  • 1 t extra virgin olive oil
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 4 c chicken stock
  • 1 carrot, peeled and diced
  • 2 ribs celery, diced
  • 1 bay leaf
  • Pinch of salt and pepper
  • 2 T cornstarch
  • 2 T water
  • 1 c heavy cream
  • 1 lb gnocchi
  • ½ c Parmesan cheese
  • 4 strips bacon, cooked and crumbled

Directions

  1. Set cooker to "sear" and add the olive oil. Add in onion, garlic, carrots, celery, bay leaf, salt, pepper, and chicken stock.
  2. Close and lock the lid, set to "soup", and adjust for 12 minutes. Press start/stop.
  3. Perform a natural release and make sure all pressure is released before opening lid. Carefully open lid.
  4. In a bowl, combine cornstarch and water and make a slurry.
  5. Set cooker to sear. Add heavy cream and slurry to broth to thicken. Add in gnocchi and Parmesan cheese and bacon. Once soup thickens, serve and enjoy.
