Ingredients
- 1 t extra virgin olive oil
- 1 white onion, diced
- 2 cloves garlic, minced
- 4 c chicken stock
- 1 carrot, peeled and diced
- 2 ribs celery, diced
- 1 bay leaf
- Pinch of salt and pepper
- 2 T cornstarch
- 2 T water
- 1 c heavy cream
- 1 lb gnocchi

½ c Parmesan cheese
- 4 strips bacon, cooked and crumbled
Directions
- Set cooker to "sear" and add the olive oil. Add in onion, garlic, carrots, celery, bay leaf, salt, pepper, and chicken stock.
- Close and lock the lid, set to "soup", and adjust for 12 minutes. Press start/stop.
- Perform a natural release and make sure all pressure is released before opening lid. Carefully open lid.
- In a bowl, combine cornstarch and water and make a slurry.
- Set cooker to sear. Add heavy cream and slurry to broth to thicken. Add in gnocchi and Parmesan cheese and bacon. Once soup thickens, serve and enjoy.
