Ingredients

  • 1 cup bacon, cut into small pieces
  • 1 small white onion, diced
  • ½ cup diced celery
  • ½ cup diced carrots
  • 1 pound bag lentils
  • 8 cups water or chicken stock
  • Salt and pepper to taste

Directions

  1. Set Skillet to 375ºF and add bacon and onion. Cook until bacon renders its fat.
  2. Add in celery and carrots and mix together and cook until translucent.
  3. Add in lentils, sauté together.
  4. Pour in the liquid, season with salt and pepper, and bring to a boil.
  5. Reduce the temperature to 275ºF, cover with lid and cook for 45 minutes or until lentils are tender.
