Ingredients
- 1 cup bacon, cut into small pieces
- 1 small white onion, diced
- ½ cup diced celery
- ½ cup diced carrots
- 1 pound bag lentils
- 8 cups water or chicken stock
- Salt and pepper to taste
Directions
- Set Skillet to 375ºF and add bacon and onion. Cook until bacon renders its fat.
- Add in celery and carrots and mix together and cook until translucent.
- Add in lentils, sauté together.
- Pour in the liquid, season with salt and pepper, and bring to a boil.
- Reduce the temperature to 275ºF, cover with lid and cook for 45 minutes or until lentils are tender.
