Spicy Creamed Corn

Ingredients
- 1 T extra-virgin olive oil
- 1 onion, small dice
- 2 jalapeño peppers, small dice
- 1 t cayenne pepper, ground
- 2-½ lbs kernel corn off cob
- ¼ c butter, cubed
- 8 oz cream cheese, cubed
- 1 c whole milk
- 1 t sugar
- Sea salt
- Black pepper
Directions
- Set pressure cooker to "sear" and add oil. Press start/stop. When hot, add onion and jalapeño pepper. Sauté until onions are translucent, about 5 minutes.
- Add cayenne pepper, corn, butter, cream cheese, milk, and sugar and stir.
- Close and lock lid, set pressure cooker to "steam/veggies", and adjust time to 7 minutes. Press start/stop.
- When done, allow pressure cooker to naturally release pressure for 10 minutes then do a quick release and make sure all pressure is released before opening lid.
- Carefully open lid. Check seasoning, and add salt and pepper, if needed.
- Serve hot.
