Spicy Creamed Corn

Ingredients

  • 1 T extra-virgin olive oil
  • 1 onion, small dice
  • 2 jalapeño peppers, small dice
  • 1 t cayenne pepper, ground
  • 2-½ lbs kernel corn off cob
  • ¼ c butter, cubed
  • 8 oz cream cheese, cubed
  • 1 c whole milk
  • 1 t sugar
  • Sea salt
  • Black pepper

Directions

  1. Set pressure cooker to "sear" and add oil. Press start/stop. When hot, add onion and jalapeño pepper. Sauté until onions are translucent, about 5 minutes.
  2. Add cayenne pepper, corn, butter, cream cheese, milk, and sugar and stir.
  3. Close and lock lid, set pressure cooker to "steam/veggies", and adjust time to 7 minutes. Press start/stop.
  4. When done, allow pressure cooker to naturally release pressure for 10 minutes then do a quick release and make sure all pressure is released before opening lid.
  5. Carefully open lid. Check seasoning, and add salt and pepper, if needed.
  6. Serve hot.
