Ingredients
- 4 c vegetable stock
- 5 kaffir lime leaves
- 3 slices galangal, unpeeled, 2 inches long
- 3 (2-inch-long) pieces lemon grass
- 1 c button mushrooms, sliced
- 2 T soy sauce
- 10 Thai chili peppers
- 1 lime, juiced
- 1 tomato, small dice

½ onion, thin sliced
- 1 lb tofu, firm, medium dice

¼ c cilantro (garnish)

¼ c scallions (garnish)
Directions
- Add stock, kaffir lime leaves, galangal, lemongrass, mushrooms, soy sauce, Thai chilies, lime juice, tomatoes, onions, and tofu.
- Close and lock lid, set pressure cooker to "soup", adjust time to 6 minutes, and press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and ladle into serving bowls. Garnish with cilantro and green onions.
