Hasselback Potatoes

Ingredients

  • 1 garlic clove, smashed
  • 3 T olive oil, divided
  • Butter, as needed
  • 3 Idaho potatoes
  • Saffron, as needed

Directions

  1. Combine garlic, olive oil, and butter in the enamel baking pan. Cook at 350°F for 4 minutes.
  2. Carefully remove from oven. Add saffron and mix. Remove the garlic.
  3. While butter is melting, place potatoes horizontally on a cutting board. Starting at one end, thinly slice each potato, cutting three-quarters of the way through each potato.
  4. Place potatoes in the baking pan. Brush each potato with garlic butter mixture.
  5. Slide potatoes into Bravo and cook for 45-50 min. Insert knife to check if potatoes are done. When done, knife will slide in easily. Serve warm.
